Chef Brian began his culinary career in a Virginia seafood restaurant at 15 years old working his way up from Dishwasher to Chef to Manager within three years. While working for others, he constantly thought of ideas for his own business. At 23, he started his own corporate catering business, Le Box Lunch, which he operated for ten years. Following the sale of Le Box, he opened Tony's 4th Street Grill in downtown Richmond. After Tony’s he was a consultant for various new restaurants helping with menu content, kitchen design, staffing and training. Being in-between businesses of his own and wanting to get back in the kitchen, he took on the position of Head Chef and Manager at a local seafood restaurant owned by friends. Always searching for his next restaurant, he opened Randolph’s on the River, a waterfront seafood restaurant near where he grew up in Virginia. He sold that restaurant and moved to The Villages in 2020.
For the first year of his early retirement, he relaxed and enjoyed a lot of pickleball, working out and cruising. But then, he wanted to get back to his passion – Cooking!! Chef Brian worked in a few restaurants here while trying to determine his next food venture. He definitely recognized the need for excellent quality ready-to-eat chef prepared meals for his fellow Villagers. Since his passion is creating beautiful and flavorful meals from scratch, he landed upon the idea Chef Brian’s Bistro To-Go. Lucky for him, his partner Lynn is a Pastry Chef who will be baking a selection of delicious desserts to go with his meals each week. She also functions as his business manager so he can work his magic in the kitchen! Both Brian and Lynn are ServSafe Food Protection Manager Certified. They are both happy to be providing great meals to their fellow Villagers!
